Place the avocado, lime juice, fresh garlic, fresh parsley, extra virgin olive oil and salt into a small blender.
Blend in short bursts until the mixture becomes smooth and creamy, adding a little water if necessary to create the desired consistency.
Hint: taste the dressing once blended so that you can adjust the seasoning and add more salt or lime juice as required.
