  • Avocado: Creamy and rich, avocado provides the base and a luscious texture for the dressing.
  • Lime Juice: Fresh lime juice adds zesty and tangy notes, brightening up the flavour.
  • Fresh Garlic: A small clove of fresh garlic gives the dressing a subtle but delightful kick.
  • Fresh Parsley: Parsley brings a burst of fresh herb flavour, nutrients, and a vibrant green colour.
  • Extra Virgin Olive Oil: Healthy fats from the olive oil adds richness and helps achieve a silky consistency.
  • Salt: A pinch of salt enhances the overall flavour, balancing the tanginess of the lime.

🥣 Instructions

Step 1 Avocado Lime Ranch Dressing Process

Place the avocado, lime juice, fresh garlic, fresh parsley, extra virgin olive oil and salt into a small blender.

Blend in short bursts until the mixture becomes smooth and creamy, adding a little water if necessary to create the desired consistency.

Hint: taste the dressing once blended so that you can adjust the seasoning and add more salt or lime juice as required.

💫 Substitutions

You can use lemon juice instead of lime for a slightly different citrus flavour.

Alternatively, if you don't have any citrus to hand, you could substitute for the same amount of apple cider vinegar.

If you exclude water from the recipe, the thicker dressing could be used as a dip for vegetables or even a simple sauce for gluten-free pasta .

Avocado Lime Ranch Dressing

Ingredients
  

  • ½ avocado
  • 2 tablespoons lime juice juice of 1 lime
  • 1 small clove fresh garlic
  • Handful fresh parsley
  • 2 tablespoons extra virgin olive oil
  • ⅛ teaspoon salt

Instructions
 

  • In a small blender, combine the avocado, lime juice, fresh garlic, parsley, extra virgin olive oil, salt and a little water.
  • Blend in small bursts until the mixture is smooth. Add a small amount of water if needed to thin the dressing to the desired consistency.

Notes

Store in an airtight container in the refrigerator for up to 3-4 days. Shake or stir before use.
