Even though canned chickpeas are pre-cooked, we will be cooking them again. This is to further soften the chickpeas, and loosen the skins resulting in the smoothest hummus youβve ever had.
You can skip this step of course, but I urge you to give it a try!
- Firstly, drain and rinse your canned or jarred chickpeas. Place them in a saucepan, fill with water, add the bicarbonate of soda, and bring to a boil.
- Once the water begins to froth, reduce the heat and simmer for 5 minutes. Use a slotted spoon to remove and discard any shells that float to the surface.
- While the chickpeas cook, you can zest and juice the lemon.
- Drain the cooked chickpeas and remove most of the separated shells. While this step is not essential, it helps achieve a smoother hummus.
5. In a blender, combine the drained cooked chickpeas, ground cumin, tahini, lemon juice and zest, fresh garlic, salt, and an ice cube.
