Hi Sari! Usually eggs are quite important in recipes with coconut flour as they are very effective to combat the dense texture (coconut absorbs A LOT of water) to make it more fluffy. I would worry that substituting the eggs for say a flax egg would create an overly dense texture, although I haven't tried it to say for sure! If you wanted to experiment with a smaller batch, perhaps add a little extra ground flaxseed plus some apple cider vinegar (which will react with the baking powder) to help to leaven the bread and add moisture? You may also need more water but do this very slowly so you don't add too much! Please let us know if you have any luck! ?

Wow! I just made these baquettes and love them! I have been gluten-free for years but recently learned (via live-cell analysis) that I am full of candida so now must be on a strict anti-candida diet. I found your website and now have hope that I can manage this gluten-free/anti-candida diet and finally get healthy.
I decided to double the recipe and also to make them smaller. I formed 8 smaller baquettes. They needed the same baking time. I have just enjoyed one- wonderful wonderful !!

I have a question. Since this has so much psyllium husk powder, would it be necessary to drink plenty of water with it?

The recipe does include water that the psyllium husk powder absorbs easily to make the bread so no I don't think you would need to change how much water you are drinking. I have not found consuming psyllium husk in recipes to impact my thirst or how much I need to drink personally. Always a good idea to be well hydrated though! ?
