2. Incorporate this almond-coconut mixture into the rest of the coconut milk.
3. Add freshly grated ginger, minced garlic, lime juice, lime zest, coconut aminos, and mild curry powder to the coconut-almond mixture. Stir well to incorporate all the flavours.
4. Transfer the satay sauce to a small saucepan and heat on a medium heat for a couple of minutes to meld the flavours and allow the sauce to reach its optimal consistency. The sauce can be served warm or cold, depending on your preference.
Hint: For a thicker sauce, let it simmer a bit longer on the stovetop, stirring occasionally.

- 200 ml Coconut Milk ½ can
- 1 teaspoon Fresh Ginger grated
- 1-2 Cloves Fresh Garlic minced
- Juice of 1 Lime
- Zest of 1 Lime
- 1 tablespoon Coconut Aminos
- 1 tablespoon Mild Curry Powder
- 3 tablespoon Almond Butter
- 1 teaspoon Apple Cider Vinegar
Instructions
- Add a bit of the coconut milk to the almond butter to thin out, before adding the almond-coconut mixture to the remaining coconut milk to achieve a smooth consistency.
- Incorporate grated ginger, minced garlic, lime juice, lime zest, coconut aminos, and mild curry powder into the almond-coconut mixture. Stir thoroughly.
