- Preheat the oven to 175°C / 350°F and line a baking sheet with parchment paper or a reusable silicone mat.
- In a mixing bowl, combine the almond flour, coconut flour, ground flaxseed, psyllium husk powder, baking powder, and sea salt.
- In a separate bowl, whisk together the warm water, olive oil, and eggs.
- Add the wet ingredients to the dry ingredients and stir until a thick, sticky dough forms.
- Shape the dough into two baguette shapes, on the prepared baking sheet. Avoid over-working the dough.
- Using a sharp knife, make diagonal cuts along the top of the baguette to create the classic baguette appearance.
- Bake in the preheated oven for 45-50 minutes, or until the baguette is firm and golden brown.
- Remove from the oven and let it cool slightly before slicing and serving.

Store your baguettes in an airtight container or wrapped in parchment inside a paper bag and keep refrigerated for 2-3 days. For longer storage, slice, and freeze for up to one month. Reheat slices in a toaster or oven straight from frozen.
You can also freeze the uncooked baguettes – simply thaw in the refrigerator the night before and then bake in the oven as instructed.
